My Husband loves his Sunday Roast, but in the middle of summer I don't always share his enthusiasm, especially when have to spend half my Sunday cooking it! So to keep us both happy, I sometimes like to cook this version which I discovered on Goop (Gwyneth Paltrow) a while back. I love the freshness of the salad as an alternative to cooked veg, and it so much lighter than a full heavy roast dinner in the summer.
